Bye, Bye Miss American Pie

I think it is time to accept the fact that summer is over. Now, technically it isn't over until September 22nd, but who are we kidding? School is back in session, its getting darker earlier, and most of all, it is starting to cool down (thank god!). I'm not incredibly bummed that summer is over, mainly because Fall is my favorite season. I have a couple of reasons why:

1. My birthday is in October (only 1 month away- YES!)
2. Fall leaves
3. The amazing temperature (usually in the 70's here in NC)
4. Scarves (self-explanatory)

and lastly....

5. Apple Pie

This is a recipe that I found forever ago. I love how you bake the pie inside the apples. Super cute, super easy, and everyone has their own mini-pie!


1. In a large bowl, combine flour and salt.
2. Cut in butter until mixture resembles coarse crumbs.
3. Stir in water, a tablespoon at a time, until mixture forms a ball. Wrap in plastic and refrigerate.

5. Wash approximately 5 apples.
6. Cup the tops off of the apples and hollow them out. Chop the insides up and place in bowl. Take the tops of the apples and peel them. Chop up the rest of the top and place into bowl with the rest of the chopped apple.
7. Add the followed ingredients per apple to the bowl:
  1. 1 tbsp sugar
  2. 1/2 tbsp all purpose flour
  3. 1/4 tsp powdered cinnamon
Mix well.

8. Fill the hollow apples with the apple mixture
9. Take the pie crust dough out of the fridge and roll out. Use a circular cookie cutter or glass to cut the dough. Take a straw and poke holes into the center for ventilation while baking. 
10. Place dough on top of the apple. Bake at 370 degrees for 40 minutes.
